The color is a luminous pale yellow with golden and silver highlights.
The nose is pure, airy, and very expressive. It reveals the characteristic aromas of Viognier: white peach, fresh apricot, white flowers (acacia, honeysuckle), and a light hint of candied citrus. More subtle notes of fine honey, fresh almond, and a chalky minerality complete a refined and balanced bouquet, without heaviness.
The palate is full, silky, and delicate. The aromatic richness is expressed elegantly, without excess: white-fleshed fruits, citrus zest, a slight buttery note, and a subtle salinity. The balance is superb, supported by a well-controlled tension that brings freshness and length.
The long, floral finish leaves an impression of purity and finesse.

Philippe Pacalet learned winemaking at a very early age from his uncle Marcel Lapierre, an iconic figure in the field of natural wine. He further developed this approach during his oenology studies, notably by writing a thesis on indigenous yeasts under the supervision of Jules Chauvet, a pioneer in sulfur-free winemaking.
In 1991, he became manager of the Prieuré Roch estate in Nuits-Saint-Georges, where he applied organic viticulture and sulfur-free, whole-bunch vinification, contrary to the Burgundian practices of the time.
In 2001, he founded his own wine merchant company. Rather than purchasing vines, he established leases with owners and fully controlled the vineyard work in the cellar. He favored old, fine Pinot Noir vines and cultivated using organic methods. Today, Philippe Pacalet produces wines in around 30 Burgundy and Rhône appellations, ranging from Côte-d'Or to the Rhône Valley (Cornas, Condrieu, Côte-Rôtie). He produces around 70,000 bottles per year and employs around a dozen people.
