Thomas Picot's wolf's paw works wonders in the vineyard as well as in the cellar. Thomas made this 1er cru from 30-year-old vines grown organically in Courgis (from one of the highest vineyards in Chablis). Aged in old barrels for two years. The results? Very attractive gooseberry nose, good weight and vinosity and a lingering finish with a mineral vibe.

Thomas Pico has been climbing the ladder since 2004. Rigorous and passionate, he pampers his vines like few winegrowers in the region, the wines enjoy a purity and an energy that is as singular as it is rare, organic farming being undoubtedly no stranger to it. An already "great" winemaker to follow especially in the sector.
Today Thomas finds himself at the head of more than 20 hectares of vines, all located on the left bank of the Serein. These larger and more functional installations allow him to go even further in his research and his perfectionism.
