Description

The color is a deep purple with violet highlights, a sign of youth and concentration.
The nose is expressive and refined. It reveals fruity aromas evoking delicate floral notes of violet. Hints of licorice and a slight hint of spice complete a bouquet that is both complex and harmonious, imbued with a beautiful minerality.
On the palate, the wine is velvety, with ample and structured body. The tannins are present but well-integrated, providing depth without harshness. The fruity and spicy notes perceived on the nose are echoed, with a flavorful, persistent, and balanced finish.

Philippe Pacalet learned winemaking at a very early age from his uncle Marcel Lapierre, an iconic figure in the field of natural wine. He further developed this approach during his oenology studies, notably by writing a thesis on indigenous yeasts under the supervision of Jules Chauvet, a pioneer in sulfur-free winemaking.
In 1991, he became manager of the Prieuré Roch estate in Nuits-Saint-Georges, where he applied organic viticulture and sulfur-free, whole-bunch vinification, contrary to the Burgundian practices of the time.
In 2001, he founded his own wine merchant company. Rather than purchasing vines, he established leases with owners and fully controlled the vineyard work in the cellar. He favored old, fine Pinot Noir vines and cultivated using organic methods. Today, Philippe Pacalet produces wines in around 30 Burgundy and Rhône appellations, ranging from Côte-d'Or to the Rhône Valley (Cornas, Condrieu, Côte-Rôtie). He produces around 70,000 bottles per year and employs around a dozen people.
