Description

A blend of predominantly Pinot Noir from four plots of old vines located at the top of the hillsides of the estate and Chardonnay from the place called “L’épine”.
Around a quarter of the wines are fermented and aged in Burgundy Demi-Muids, the rest in stainless steel vats.
The first contact on the palate is supple and fresh with a creamy and melted effervescence. The Champagne develops a pulpy and crunchy fruity substance, highlighted by lemon and pomelo acidity. The whole delivers a full and harmonious sensation orchestrated by minerality and with a fruity and generous finish.

Know a bit more about the domain

Created in Bligny by the monks of Cluny Abbey, the Priory of Sainte Eulalie plays an important role in the development of farming and winemaking techniques in the Cote des Bar. In the 1950s, Charles Roger Duval acquired it as well as the entire 28-hectare vineyard, the Monopole de Sainte Eulalie. Edouard Duval (Roger's grandson) took over the reins and has been producing his internationally recognized Champagnes there since 2015, in a unique style.
