The nose reveals complex aromas, revealing an explosion of ripe black fruits, such as plum, blackcurrant, and black cherry, blending harmoniously with more subtle notes of truffle, dark chocolate, and graphite. As the wine breathes, aromas of oriental spices and licorice emerge, accompanied by hints of incense and fine leather. The aromatic bouquet is of great depth and evolves with increasing complexity.
On the palate, the attack is opulent and the texture is extremely sensual. The wine unfolds with impressive richness, while maintaining remarkable precision. The tannins, powerful yet extremely refined, envelop the palate with exceptional smoothness, offering a structure that is both imposing and elegant. Flavors of black fruit, mocha, and vanilla blend harmoniously, while deeper notes of damp earth emerge, revealing a unique terroir. The finish is long and persistent, marked by a lovely freshness and slightly minty notes that enhance this exceptional wine.

The architecture of Château Pavie harmoniously blends contemporary simplicity and Bordeaux classicism. The space is organized around a monumental hall, bathed in natural light thanks to large glass facades offering breathtaking views of the vineyards and surrounding landscape. Some consider this location "the most beautiful in Saint-Émilion," with views of the village on one side and the vineyards sloping down to the Dordogne on the other.

The estate is divided into three distinct terroirs:
- The limestone plateau, at an altitude of 85 meters, with lithic limestone soil.
- The slope, at an altitude of 55 meters, with fine clay-limestone soil.
- The foot of the slope, at an altitude of 35 meters, with clay-limestone soil on the lower slopes.

These terroirs benefit from excellent sunshine and ideal conditions for viticulture, thanks to a natural slope and southern exposure. The vineyard, protected from the westerly wind, is frost-resistant and benefits from natural drainage.

Vineyard work is entirely manual. The Château Pavie team places particular emphasis on green harvesting to ensure even ripening of the grapes, thus guaranteeing the quality of the wine. The grapes are harvested by hand and sorted on two tables before being sent to the vat room.
